"CHICKEN BREASTS STUFFED WITH DRIED FRUITS"
Ingredients:
4 bone-in, skin-on chicken breast halves (split breasts)
1/4 cup freshly grated Parmesan cheese
8 slices prosciutto ham, diced
2 tablespoons golden raisins, diced
2 tablespoons dates, diced
2 tablespoons currants
2 shallots, minced
2 cloves garlic, minced
1 cup chicken stock
1/4 teaspoon salt
1/4 teaspoon black pepper
1/3 cup red Vermouth
4 tablespoons butter
Preparation:
Preheat oven to 350°F (175°C).
In medium bowl, combine Parmesan cheese, prosciutto ham, raisins, dates, currants, shallots and garlic. Mix well.
