Such as Scharffenberger or Callebaut, finely chopped
Unsalted butter.........3/4 cup (1 1/2 sticks)
Slightly softened, cut into pieces
Pure vanilla extract ...1-1/2 ts
For the cake:
Boiling water ............1/2 cup
Unsweetened cocoa powder (not Dutch process)...1/2 cup
Plus extra for dusting the pans
High-quality unsweetened chocolate......4 ounces
